Republic is a great place to grab a quick and affordable bite, but you have to play it right. If you sit at one of the ugly tables, you're missing half the fun!
Opt for seats at the counter facing the kitchen -- there you can watch the staff preparing the wide array of noodle dishes. Its like sitting in on a live cooking show, and can be great fun for a casual date or an inquisitive child.
Order according to your taste. The various menu items are inexpensive but not terribly filling -- such is the way with Oriental fusion food. The noodle soups are tasty and refreshing, and the various platters are attractive and made from fresh ingredients.
Better for lunch or a shoppers snack than dinner -- the lunch crowd moves fast here, so there is rarely much of a wait. Mid-afternoon is a great time to try the place out. Keep in mind that peak meal hours can get very noisy thanks to the utilitarian bare-walls decor. But it can be just right when your budget is tight and time is short -- worth investigating.
