Never Fail Standing Rib Roast!

This sounds really strange but it has never failed to produce a perfect standing rib roast for the past 2 generations! After an initial hour of cooking (can be anytime of the day, even early morning) just turn the oven off and finish the cooking just before you want to serve the roast! Be sure to put a sign on the oven door "DO NOT OPEN". Keeping the door closed is the secret!
This recipe is great! It allows you to have a perfectly prepared roast in a very short time so you don't need to plan, in advance on a specific dining time. It provides a lot of flexibility for you and your guests. The only downside is that it ties up an oven for a long time, especially if you do the first baking in the morning!
rib roast (size doesn't impact recipe!)
herbs and seasoning as desired
Bring the roast to room temperature.
Preheat oven to 375 degrees.
Rub with herbs and seasoning as desired.
Bake, uncovered, for 1 hour.
Turn oven off, keeping oven door closed. Do not open oven door!
Before you are ready to serve, turn oven back on at 375 degrees (continuing to keep the oven door closed) and bake for an additional 30 minutes for medium rare. At the second baking, decrease time for 5 minutes for rare beef and increase time 5-8 minutes for medium beef.
Let roast stand for 10 minutes before carving.
Use a quick registering thermometer at the end to ensure that the meat is properly cooked to your liking.This recipe is from Cody Fagan, an old family friend.
